The Marchesi Mazzei company, always in search of technological innovations in the wine sector, uses IT systems in all production departments. From the moment the grapes arrive in the cellar, the winemaking process begins which will lead to the transformation of the grapes into an excellent wine. The company divides the vineyards of the various wine-growing areas into classes of vigor, dividing the areas of the individual vineyard into separate parcels to then conduct specific fermentations of the site of origin. This division continues throughout the production process from the arrival of the grapes, to fermentations, aging and storage, operations that are constantly monitored through the use of platforms that follow each development of the individual tank step by step. Thanks to these software, we are able to manage temperatures and manage the amount of oxygen to be blown into the tank for perfect wine evolution. We use these platforms as a complete traceability system of all the procedures and processes carried out over the years regarding the individual product up to the time of bottling, including the execution of chemical and organoleptic analyzes. Then the individual operations are recorded with the various products used, thus tracing a complete system of all lots by type of wine. This allows you to have an always updated picture of the residual stocks of the products and the hours spent for a particular bottled wine bottle.
